You can bake in Madeleine dishes even without parchment paper. Lightly grease the dish with butter or oil, then sprinkle with flour (for savory or neutral recipes) or sugar to achieve lightly caramelized edges. From there, anything is possible! You can use vanilla sugar or lemon-flavored sugar to give a special taste even to the simplest loaf cakes. In the oven, heat envelops the preparation evenly from the edges toward the center, ensuring optimal rise and baking.

Handcrafted in France from natural materials

The dishes are made from a combination of clay, rock sand, and water, coated with a glass glaze and fired at high temperatures. They are completely free of heavy metals (lead, nickel, cadmium, aluminum, chromium) and petroleum-derived materials (PFAS, BPA, PTFE, PFTE, etc.). The glass enamel of the “Madeleine” dishes is highly scratch-resistant. You can use metal utensils to cut and serve cakes directly at the table, without needing to remove them from the mold beforehand. The non-porous ceramic does not retain odors, does not stain, and maintains its shine over time. The ultra-smooth, impermeable surface prevents sticking and allows easy release of preparations from the mold.

Cold storage

Ceramic is also ideal for keeping dishes at an optimal temperature. A sweet or savory tart, prepared for baking, can wait in the refrigerator to be baked just before serving.
